Three healthy recipes for healthy eating with cooked chickpeas

Saying health food and fast food in the same sentence sounds strange, doesn't it? Well, it's not with healthy recipes with chickpeas easy to cook. Although if you are not one of those people who plan ahead and are not very creative in the kitchen, it has happened to you more than once when it's time to eat and you have no idea what to do. Hummus

Hummus is a great way to consume legumes, which are so important in our diet. It’s a very nutritious dish that provides us with carbohydrates, protein, vitamins, minerals, fibre, and healthy fats. But what's more, it's also so delicious and easy to prepare!

All you need is:

● 1 tin (400g) of cooked chickpeas
2 cloves of garlic
● 3 tablespoons of extra virgin olive oil
The juice of one lemon
1 teaspoon of ground cumin
1 pinch of iodised salt
Pimentón de la Vera (hot or sweet)
1 tablespoon of tahini (sesame paste).

And to prepare it, all you would need is:

1. Drain the chickpeas and add the remaining ingredients to a bowl (except for the paprika).
Blend everything in a blender and serve in a bowl.
3. Drizzle with a splash of virgin olive oil and sprinkle with Pimentón de la Vera.

If you don't have tahini, don't worry either. However, you will need some wholemeal bread or toast, and a sufficient variety of vegetable sticks to accompany the hummus. This recipe will be enough for 2-3 meals, or for several side dishes. Enjoy!

Chickpea salad with avocado and tuna

With chickpeas, we could make hundreds of tasty and healthy salads by varying the ingredients. Here we suggest one of our favourites. You only need:

  • One jar of cooked chickpeas: 400 g
  • 1 avocado, diced
  • 2 ripe tomatoes
  • 1 tin of tuna in olive oil
  • ½ chopped onion
  • The juice of a lemon
  • 2 tablespoons of extra virgin olive oil
  • A pinch of iodised salt
  • A pinch of pepper
  • 1 tablespoon coriander
  • 1 tablespoon mustard

And to prepare it:

1. Chop the vegetables and place them, along with the drained chickpeas and the tuna with its oil, in a serving dish.
2. Prepare the dressing with lemon, olive oil, coriander, mustard, salt, and pepper.
3. Mix the dressing with everything else and stir well. This preparation will be enough for two meals or several side dishes.

Sautéed chickpeas with mushrooms

Stir-fries, much like salads, can be a great way to create healthy chickpea recipes. By varying the ingredients and using what you have in the fridge, you can come up with loads of healthy dishes. Here we bring you a simple and completely vegan, but super tasty, recipe. You only need:

  • One jar of cooked chickpeas: 400 g
  • 150 – 200g of mushrooms (whatever variety you prefer)
  • 3 cloves garlic
  • 2 grated tomatoes
  • 2-3 tablespoons white wine
  • Extra virgin olive oil
  • A pinch of iodised salt
  • A pinch of pepper
  • 1 teaspoon of Pimentón de la Vera
  • 1 teaspoon cumin

And to prepare it:

1. Drain the chickpeas
2. Sauté all the ingredients in the pan.
3. Add the pimentón de la Vera and cumin and stir well.
4. Add two or three spoonfuls of wine and let it simmer for about 5 minutes until it evaporates. This recipe will serve 2 meals or several side dishes. You can substitute the mushrooms with vegetables you have in the fridge or freezer.
